Strawberry Scones

Ingredients

  • 2 c Flour
  • 1/3 c Sugar
  • 1/4 c Butter
  • 2-1/2 tsp Baking Powder
  • 3/4 tsp Salt
  • 2/3 c Half N Half
  • 1/2 tsp cinnamon
  • 1/2 c Strawberries (finely chopped)
  • 1 tsp Lemon zest
  • 1 tsp Lemon Juice
  • 1 egg (mixed with water for Egg wash)
  • Directions

    1. Mix together and form into flat circle.
    2. Cut into 8 scones.
    3. Bruch with egg wash and sprinkle with cinnamon/sugar if desired.
    4. Place in freezer for up to 15 minutes.
    5. Preheat oven to 400.
    6. Bake for 10 minutes at 400 degrees.
    7. Turn the heat down to 375 without opening the oven.
    8. Bake for another 8-15 minutes, until the tops are golden brown.
    9. DO NOT OVER BAKE. This is where the magic happens, so stay nearby. If you over bake your scones, they will be dry even if you did everything else right. If you are not sure, use a spatula to lift up one of the scones. If they are a nice golden brown on the bottom, they are done.
